GLUTEN FREE BAKING
Gluten is the tough, rubbery, elastic substance mixture of wheat proteins which is formed when flour is mixed with water or liquids containing water. Gluten exists in dry protein form in flour, and is composed approximately of equal proportions of gliadin and glutenin. Gliadin gives baked products elastic or stretching properties to gluten, and glutenin is responsible for giving dough strength to hold leavening gases, and will determine the final structure of the baked product.
At The Bakery we take pride in the fact that all of our “Gluten Free” baking is made fresh daily from the finest ingredients. All baking is done on location with our customers dietary needs and concerns always first in mind. We have developed and perfected all of our own recipes over the years, and our continually adding new ones to the menu. We use fresh milled whole grains ingredients, such as rice, millet, buckwheat, teff, kasha, oats, flax, quinoa, and other many more healthy and delicious items in our baking. If you or someone you know is missing out on eating the things they want because of a wheat or gluten allergy please give us a call for some fresh gluten free baking.
Please note, since our products have no preservatives, their shelf life is quite short. For this reason, we always recommend refrigerating or freezing your gluten free products.
